HARVEST: hand picked (100%) in September.
VINIFICATION: free fermentation in steel at cellar temperature (24/29 °), at the end of the alcoholic fermentation with indigenous yeasts (10/15 days), barrel accommodation (10 ql steel). No filtration, no clarification.
MACERATION: contact with the skin for only 3 days.
AGING: 6 months in steel, 6 months in bottle.
BOTTLES PRODUCED: 6200.
