1994 Domaine Pecheur Cotes du Jura Vin Jaune

A rare, extended-aging expression of Savagnin from Domaine Pêcheur in Darbonnay, aged sous voile (under a natural veil of yeast) for six years and three months before release, then cellared for decades more. It pours a deep golden hue with a nose of toasted walnuts, curry spice and dried apple, echoing a fine dry sherry. The palate is high in acid and intensely savory, layered with green olive, saline minerality and a long, nutty finish that lingers for minutes.
