Les Pouches is François' newer parcel of Chenin Blanc, replacing the Fontanelles cuvee. 2017 was his first vintage. The parcel is situated in a ancient river bed and the vines are around 30 years old. A third of the harvest was whole bunch macerated for about 2 weeks, while the rest was directly pressed. They were kept separated in 600L barrels plus the Stockinger (1200L), then everything was put together a few weeks before bottling
