Nestarec Transcendent NV
This rosé is a quirky looker: direct-press red juice added to an open vat where white grapes were already fermenting on skins. At first, it was a combo of Neuburger, Riesling and Regent (German hybrid, Nestarec's father's 1990s heritage), the current No. 3 marries Pinot Blanc, Noir and BF, as we lost the Regent plot. All grapes have always come from their Slovenské vineyard, so it's a true field blend. The place here is more important than the grapes – it's a small part at the top of the slope, pure loess under chernozem topsoil.
