2021 Fond de L'Air is made from 80 year-old Cinsaul vines. The palate has the typical high acid and tension of the Cinsault, with its floral vibrancy, as well as its typical reduction, faintly in this release, and its angular tannins - clove, musk and roasted Provençal herbs. It is a quite a fresh and crunchy red for the Roussillon.
