The Domaine: All our wines come from plots in the heart of the Puy-de-Dôme department. The grape varieties used are Gamay, Pinot Noir and Chardonnay. Planted on different slopes of the Puy de Corent (Basalt plateau), the Puy de Marmant and the Montagne de Stras, our vines are planted between 380 and 500 m. altitude on a total surface area of 5.8 ha. with a density of 5500 vines/ha. We work on two different terroirs: - Half on volcanic soils (colluvium and basalt rocks) - The other half on limestone soils (clay-limestone enriched with volcanic debris, basalt, peperite, pumice, pozzolan, quartz, etc.). Our vines and wines are certified organic. We also practice the principles of biodynamic viticulture. Our grapes are harvested by hand. The wines are vinified with indigenous yeasts, without oenological inputs or filtering. A small amount of sulfite may be added before bottling (between 5 and 20mg/l) if required (see product sheet). Our logo and the graphics on our bottles refer to archaeological finds near Clermont-Ferrand. They represent deer painted on vases dating from the Gallic period.
