Alessandro Viola Blanc de Blancs
Easily one of Italy's most important traditional-method sparkling wines, i.e. wines made exactly like Champagne, just from another place. Alessandro Viola is Sicily's most sensitive, studied grower, working in sandy oceanside soils in the northwest corner of the island. This Blanc de Blancs is soft, glowing, and salty, with clear tension and acidity throughout. It's a masterwork; there are precious few other sparkling wines in Europe like it.
Alessandro Viola’s Blanc de Blancs Pas Dosé is made from 100% Catarratto grapes, grown organically in Sicily's Fastuchera district, on limestone soils. This sparkling wine undergoes methode champenoise, with a second fermentation in the bottle and at least 20 months of aging on lees. The wine is made with no dosage and minimal intervention.
