The bottle: Chardonnay from vines planted in 1990 on grey Lias marl, fermented with native yeasts and aged long on lees in old barrels and concrete. Taut and bright with a saline, mineral finish that runs longer than the price suggests. Serve cold with oysters, roast chicken, or a properly stinky cheese.
The producer: Jean-Baptiste Menigoz taught school in Arbois before apprenticing with Stephane Tissot and going all in on wine, joined later by Florien Kleine Snuverink. They farm around 7 to 10 hectares organically and biodynamically in Abergement, working with native yeasts, no fining or filtration, and barely any sulfur.
One note: this cuvee is labeled Pollock's (with the apostrophe-s) on the bottle, so you may want to match that in the Shopify title.
100% Chardonnay. Organic farming practices with some biodynamic principles peppered in. Indigenous yeast fermentation, no fining, no filtration and no sulphur.
