Grape: Muscat Valvin, Noiret, farmstead apples
Vineyard: grapes from Folts Family Vineyard in the Finger Lakes – silty loam soils, conventional farming. apples from the Chertok farm, 50 year old trees, clay soils, practicing organic.
Winemaking: Whole cluster, food tread grapes, 3-4 weeks of maceration with daily punchdowns. lots were split into two and refilled with apple millings, macerated for an additional 1-2 weeks. pressed into flextank eggs.
Aging: 6 months in flextank eggs on gross lees.

Added S02: small amount during fermentation due to specific vintage condition
