Tanca els Ulls Ancestral 2024
Made using the ancestral method (fermented and bottled in one go, rather than the Champagne method's second fermentation), this Pét-Nat comes from Francesc Boronat's small family estate in Nulles, a village where he's been reviving his grandfather's old organically farmed vineyards since 2014. The name "Tanca els Ulls," Catalan for "close your eyes," nods to the leap of faith it took to restart a family winery in an area where active wineries had otherwise disappeared entirely
