From organically farmed, old-vine parcels on the northern slopes of Mount Etna, between 750 and 1000 meters elevation. SRC is a small family estate working with minimal intervention in both vineyard and cellar, letting the volcanic terroir β rich in igneous rock, nutrient-poor soils β speak for itself. Vines range from 50 to 120 years old. The Rosato is 80% Nerello Mascalese and 20% Insolia Minella, destemmed and pressed for 6β7 hours before free-run and pressed juice are unified in stainless steel.
