A single-plot cuvée on heavy clay-limestone soil, Les Chaintres comes from forty-year-old vines harvested manually. Long maceration (1 and a half months), fermentation and aging in 2.25 hectoliter barrels for 23 months. Few inputs, only a few grams of sulfur before bottling.
