Grapes are picked by hand when fully ripe, and traditionally pressed. Alcoholic fermentation in foudres and barrels with regular stirring of the lees, partial malolactic fermentation. Aged sur lie for 7 months before bottling. 50% reserve wines aged in concrete tanks. no filtration.

Disgorged in June 2024 with a dosage of four grams per liter, Laherte’s latest NV Extra-Brut Ultradition (2021 base) is produced from equal parts estate-grown and purchased fruit, sourced from the Coteaux Sud d’Épernay, Vallée de la Marne and Côte des Blancs. Based on the 2021 vintage and incorporating 55% reserve wines from 2020 and 2019, this cuvée is composed of 60% Pinot Meunier, 30% Chardonnay and 10% Pinot Noir. It opens in the glass to reveal expressive aromas of pear, brioche and orange zest. On the palate, it is medium-bodied and vibrant, marrying finesse with persistence, laden with mouthwatering acidity and culminating in a long, resonant finish. With an annual production of 70,000 bottles, this is the estate’s largest, most important cuvée.
