Eleni Vocoret trained under Chablis legend Vincent Dauvissat, and she and Édouard now farm their 5 hectares organically and bottle each parcel on its own. Le Bas de Chapelot comes from 40-year-old vines just below the Premier Cru Montée de Tonnerre. It’s classic, taut Chablis with lemon verbena, crushed rock and saline acidity, from one of the most exciting new-wave producers in Burgundy.
