Pinot Noir from two plots with heavy Volcanic influence. Whole cluster maceration and aging in partial new Oak. Chauvet makes it clear that the nature of the wood/cooperage is designed to not impart oak but rather age the wine gracefully. Auvergne meets Burgundy.
