100% Monastrell from estate grapes grown organically with some biodynamic techniques in Villena, Alicante, on sandy-saline soils. Hand harvested and cold soaked, with a third of the fruit undergoing whole-cluster carbonic maceration and native yeast fermentation. Bottled unfined, unfiltered, with zero added sulfites.
