Bichi No Sapiens 2023
Type: Red Grape: Dolcetto
Region: San Antonio de las Minas, Ensenada, Baja California, Mexico
Style: Still, light to medium-bodied, carbonic, dry
Flavor: Blueberry, black tea, rooibos, fine grippy tannins, sharp acidity, umami finish
The bottle: Single dry-farmed vineyard, 69-year-old own-rooted vines on sandy soils at 300m, close to the Pacific. Whole-cluster fermentation, wild yeast, stainless steel. Unfined, unfiltered, zero added sulfur.
The producer: Brothers Noel and Jair Tellez started Bichi in 2014 in Tecate - "bichi" means naked in the Yaqui dialect. They farm biodynamically and spend their time recovering old forgotten vineyards across Baja that the mainstream wine industry walked away from.
