Sauvignon Blanc and Sauvignon Gris from producers Alice and Olivier De Moor. The grapes come from a plot planted in 1950 in the Sauvignon de St. Bris AOC, an all Sauvignon appellation in Chablis. Like their other wines, this undergoes malolactic fermentation, but is aged on the lees in amphora, demi-muid and old barrique (1/3 of the wine in each). The name of the wine means "without noise". An atypical SB due to its high ripeness, tropical-leaning fruit character and sometimes residual sugar.
