A rarely-seen entry from Valentin’s domaine; this is 100% Poulsard direct-pressed so as to render a pale wine closer to a white, i.e. blanc de noir. Ferment and eight months’ élevage were all carried out inside of one concrete egg. Unfined, unfiltered, no SO2 added. This wine has its origins in the vintage 2014, Valentin’s first year harvesting at his own domained, when the dreaded Suzuki fly nearly destroyed his entire first harvest of Poulsard. With some insight from his father, he decided to press the Poulsard directly (like a white) to try to save the juice from the super acetic skins. Over time, the resulting wine became delicious and something of a cult favorite for a few Parisian sommeliers; now Valentin produces this wine only in great vintages for Poulsard when he has excellent quality and enough fruit to spare. 2022 is the fourth iteration of ‘Albinos!’
