Domaine Bourdy Savagnin Cotes du Jura Vin Jaune 2016

Made from the brilliant Savagnin, it is the grape used for the great specialty wines of the Jura - Vin Jaune and Chateau Chalon: wines made under a yeast called “flor.” In this case the Côtes du Jura Savagnin is aged less - four years in barrels that are not topped up - for freshness and complexity. Jean-François calls it a “baby Vin Jaune.”
