Vines: 80 year old Maccabeu on gneiss/sand/clay from around Cassagnes. 40 year old Grenache and Vermentino on schist from Laroque-des-Albères

Vinification: One stainless steel tank filled with direct press Maccabeu (70%) and Grenache. Another similar tank filled with whole bunch Grenache and Vermentino and left on skins for 14 days. Pressed and blended in early October with the Maccabeu/Grenache into stainless steel until bottling.

Fining: No Filtering: No Added SO2: Yes
