Champagne Ponson Brut Premier Cru

This wine is a blend of 70% Pinot Meunier, 15% Chardonnay, and 15% Pinot Noir. It was fermented in stainless steel and concrete tanks using a pied de cuve—a starter culture of natural yeasts from the vineyard. While some parcels underwent malolactic fermentation, it wasn't encouraged. 

Aged on its lees for 50 months, the wine was then disgorged with a dosage of 7 grams per liter. On the nose, it offers bright and forward aromas of yellow plum, apricot, clotted cream, brioche, and apple tart. The palate is moderate in weight, with fruit notes balanced by creamy brioche, apricot danish, and a hint of clay minerality.
