Els Jelipins Rose NV

Els Jelipins has no real meaning, but is meant to convey a feeling. This tiny family winery is dedicated to the rare Sumoll grape, which is native to Penedès. This dry rosé is a blend of mostly Sumoll with about a third Macabeu, both from 100 year-old vines. Two days on the skins are followed by aging in beeswax-lined amphora. A savory, earthy rosé to pair with xató salad.
