60 year-old organically cultivated Gamay in the Ardèche planted to sandy granitic soils.
Grapes are hand-harvested, manually destemmed, and macerate for 3 weeks before being pressed.
Spontaneous fermentation and aging for 15 months thereafter in amphora and neutral barrel. Bottled unfined, unfiltered, no additional SO2.
