Re-fermented grape pomace (piquette) from direct-pressed white wines for 3-7 days, then blended with 30% finished wine (Riesling and Verdejo). The wine is then infused with Japanese and California yuzu peel from YUZUCO. The base wine was fermented with native yeast and bacteria and a light bottle re-fermentation was initiated with a Champagne yeast starter.

Yuzu combines a bright pop of citrus with herbal notes of basil, mint and rosemary — a truly unique fruit and experience. Lite Werk Yuzu is like the mimosa you never knew you needed!
