Olivier Horiot Champagne Seve Rose de Saignee
Pinot Noir It opens into aromas of red forest berries (cherry, wild strawberry, redcurrant) and flowers (rose, peony). The palate revels its lush fruit and great delicacy, and ends with remarkable length. Sève is made from Pinot Noir grapes harvested from a single vineyard called 'En Barmont' in the Ricey Village. It is characterized by a 4 day carbonic maceration processs. Bunches are placed, still whole, in steel tanks, which are hermetically closed and then filled up to saturation with CO2. It ages in barrel for 54 months, minimal addition of SO2 and zero dosage.
