Clement Poirel took over the estate of Loire legend Jean-Francois Chene in 2020 — same vineyards, same cellar in southern Anjou. He has made it entirely his own: biodynamic principles in the vineyard, as little as possible in the cellar, and reds that are low in alcohol and high in everything else.
