Santuvario red is made annually, from Ivano’s younger (20-to-40-year-old) vines in both Boca and nearby Maggiora, on 400m-high sites in the middle of the woods on porphyry-rich volcanic soils.
Ivano, the winemaker works the vines organically and by hand, including manual harvest. The fruit is destemmed and co-fermented with native yeasts in stainless steel tank with a two-week maceration. The wine is then pressed by hand in a torchio and aged in a single 1700-liter Austrian oak cask for one year and then for another year in bottle before release.
A wine of incredible complexity and balance, vertical and deep, with notes of red cherry, milk chocolate, mushroom, leather, crushed stone, undergrowth and goji berry on the nose. On the palate, it reveals notes of herbs, earth and sweet spices, dark fruits and warm hazelnuts, black tea and a great salty, bitter minerality. Medium-bodied, with racy acidity that carries through to a fresh, balsamic finish
