Négocient Red Burgundy from Seiichi Saito. This is 100% Pinot Noir from organically cultivated vines in Comblanchien (base of the slope, clay-dominant). Grapes are hand-harvested, 50% whole-cluster, 3-day semi-carbonic maceration prior to pressing. Spontaneous fermentation in tank with gentle punchdowns. 8 months élevage in neutral barrel before an additional 8 months in tank. Bottled unfined, unfiltered, minimal added SO2.
