Fruit: Cherries and Sylvaner

Vineyard: Organic vineyard, with biodynamic and regenerative farming practices. 

Making of: Fruit is harvested by hand and carefully sorted in the vineyard. Sylvaner from 2022 is spontaneously fermented on indigenous yeast, co-fermented for 10 days with 5% macerated cherries and a touch of water for balance. Secondary fermentation takes place in bottle. Unfiltered, undisgorged.

Personality: Cherries, crunchy red fruit, fine bubbles and superb drinkability.
