About this wine
Dominique Moreau farms a single biodynamic parcel in Polisot, in the Côte des Bar, on Kimmeridgian limestone like Chablis. Efflorescence is Pinot Noir from 40-year-old vines. Both fermentations use wild yeast in old barrels, then the wine rests about three years on the lees and is bottled with no dosage. Red plum, mint and chamomile open into a layered, powerful grower Champagne that stands up to a real meal.
