2023 Les Terres Dubien 'Calouk' Red Blend, Bordeaux, France

Calouk comes from a rare "urchin limestone" terroir in Couquèques, in the northern Médoc, a fossil marine soil the producer says exists nowhere else in the appellation. Old vines of Merlot and Cabernet Sauvignon root into that ancient seabed, farmed biodynamically and harvested by hand. It is vinified with native yeasts and gentle extractions, and bottled without fining or filtration. The producer suggests it with roast milk-fed lamb or slow-cooked confit shoulder.
