The Mas de Chimères winery is located in the south of France and makes a handful of mostly red wines from local grape varieties. This is made entirely from Cinsault and is full of lively red and dark fruits. The fruit reveals itself best with a decant and, during warmer months, tastes delicious with a modest chill.
