Le Coste Le Chat White NV

Le Coste Le Chat Chardonnay is made from 100% Chardonnay grown organically near Pitigliano, close to the Tuscan border. The 50-year-old vines grow at 450-600 meters elevation on volcanic soils rich in iron and minerals near Lake Bolsena. Grapes are harvested manually in early September, destemmed, and directly pressed. Free-run juice ferments for three weeks in stainless steel tanks, then ages 12 months in used 500-liter French oak barrels, followed by six months bottle maturation. Bottled without fining, filtration, or added sulfites at 12% alcohol.
