Dolin Dry Vermouth de Chambéry, Savoie, France

Dolin has made vermouth in Chambéry, in the French Alps, since 1821, and it’s one of the last independent houses still doing it. This dry vermouth steeps whole plants in a light Ugni Blanc base instead of using pre-made extracts. It opens with a gentle, almost lychee-like sweetness, then turns to dry Alpine herbs and finishes on bitter clove. It’s the bartender’s go-to for a classic dry Martini, and it’s also lovely on ice with a twist.
