Xarello grapes purchased from Catalan producer Toni. The vines are approximately 60 years old and grown in a chalky soil at an altitude of 300 meters, facing south. The whole bunches are vinified in amphorae for five days, then pressed and aged in amphorae before bottling with no added SO2.
