The bottle: Hand-harvested from 20-year-old vines on decomposed granite soils. 5-day semi-carbonic maceration in stainless steel. Unfined, unfiltered, no chemicals added at any stage.

The producer: Els Bardissots is a collaboration between Oriol Artigas, Pep Pou, and Pilar Rosell — three friends who studied oenology together starting in 2010 and launched the project in 2016. They work old vines north of Alella along the lunar calendar, farming without any chemical intervention.
