From a selection of Xarel-lo vines planted in the 1950s to the 1970s on chalky soils in the Alt Penedez. Farming is organic and biodynamic. After the fruit is harvested by hand, 1/3 are direct pressed and fermented and aged in 500L used French oak barrels; 1/3 are direct pressed into clay amphorae; and 1/3 ferment on the skins for 14 days and are aged in stainless steel. No added SO2, no fining and no filtratrion.
