Jean-Marc Pillot is the fourth generation of the Pillot family to tend vineyards in Chassagne-Montrachet, taking over the domaine in 1991. His son Antonin has since taken the lead, representing the fifth generation, and has moved the estate toward organic farming since 2021, with certification arriving for the 2024 vintage. Most of the domaine's vines are old, averaging over 50 years.
This Aligoté comes from a parcel in Remigny, just south of Santenay, planted in 2000. It's aged for 12 months in used oak barrels, which gives it more texture and complexity than Aligoté aged only in steel.
