Hiyu Draco 2022
Grapes: Field blend of grapes from Southwestern France, primarily Merlot (38 different heirloom clones).
Vineyard: 0.2 hectare parcel on a rolling plateau in the northeast corner of the farm exposed to wind and western sun.

Making of: Fermented in whole clusters, tread by foot in an open top wooden vat and pressed with a small ratchet press.
Personality (from the winemaker): The Burgundian winemaking style used here has resulted in a vintage with density but also “a staggering perfume rarely seen in that region these days. This wine is fun to drink for its sheer astonishing fruit and perfume but will age into truffly depths over the next three decades.”
