Fancoise Martinot Champagne Bistrotage Extra Brut Blanc de Noirs B.17
This Grower Champagne is 100% Pinot Noir from Francois's vineyard holdings in the Aube done for her by her son Charles Dufour. It was aged 50 / 50 in oak barrels and tank, and disgorged without dosage. This iteration pours a bit golden in the glass while the nose shows light apple and clay minerality. The palate is just shy of moderate in weight with clay minerality up front that give way to apple and just the lightest suggestion of cooked dough.
