Here they have taken the same minimalist approach to the winemaking and biodynamics in the vineyards that have made the wines from Ovenoy so legendary (not to mention that other Houillon unicorn, Bruyere-Houillon!) These are wild wines, but still possess the depth and southern Rhône intensity from the classic grapes of the region (Syrah, Grenache, Cinsault). \u003cbr\u003e\u003cbr\u003e\u003cbr\u003eThe Indigo cuvée is made from Syrah, supplemented by Grenache Noir and whose average vine age is 20 years. The harvests are manual and the grapes are carefully sorted. The harvest is entirely destemmed, followed by a 14-week maceration in stainless steel vats. The wine is then aged for 14 months in stainless steel vats.
