They built their winery in 2000, three years after their father (a winemaker with a talent and passion for natural wines) passed away, and have been making natural wines in his honor ever since. All their wines are made from biodynamically grown grapes without any added sulfur and spend 18-20 months in concrete vat.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003e50% de-stemmed Cinsaullt + 50% whole-cluster Aramon. 7-day maceration, then pressed. fermentation and aging in concrete. Cinsault is picked first, after a few days the fermentation is going strong and the concrete tank is saturated in C02; they then add the Aramon and leave the two varietal co-ferment for 7 days before pressing.
